Our Kitchen Helper & Oatmeal Pancakes

This morning Emahry & I enjoyed making & eating oatmeal cinnamon pancakes. I love having Emahry help me in the kitchen & she really seems to enjoy it also. She likes to pour & stir, but of course, taste testing appears to be her favorite part. I am so thankful to be able to share these moments with her & to have the time with her to build these special memories.

I came across this pancake recipe in the comments section of my friend Kristin's blog. The recipe is for making the mix, which is great because you only have to add the wet ingredients when you want to make pancakes. This is our favorite pancake recipe because it has such a great flavor & the pancakes are so moist. I also love how easy and inexpensive the recipe is.

Oatmeal Cinnamon Pancakes

4 cups old fashioned oats
2 cups all-purpose flour
2 cups whole wheat flour
1 cup packed brown sugar
1 cup instant dry nonfat milk
3 Tablespoons baking powder
2 Tablespoons cinnamon
5 teaspoons salt
1/2 teaspoon cream of tartar

Mix these ingredients together, I use my hands to make sure the brown sugar
is mixed in well. Store in a gallon sized freezer bag or airtight container.

Yield: 10 cups of pancake mix.

To make pancakes:
2 eggs
1/3 cup applesauce
2 cups of pancake mix
1 cup water

Beat eggs in a large bowl. Gradually beat in applesauce. Alternately add mix and water to mixture. Blend well. Preheat and oil griddle. Pour 1/3 cup batter per pancake. Cook until bubbles form around edges, flip and cook until done.

Yield: about 10 pancakes

Here's a photo, sorry the pancakes don't look the greatest, that's what happens when you don't have a griddle & have to cook them in a skillet instead, they're still delicious.

  2. Ok. Believe it or not, they sound AND look yummy. My kids would love these. Hey, this might be a great addition to a Christmas gift box. You know, cookies, fudge, trail mix and the dry ingredients for oatmeal pancakes. Hmmm, I may try that.

  5. I've always been a huge believer in cooking with children - it teaches them math, science, art - everything all wrapped up into one! Plus - kids seem to naturally want to help which is a great self esteem booster! Enjoy these precious times!

  12. I followed a link from another persons blog to yours... and what do I see? This yummy recipe and a photo that brought back memories. My kids are both grown, and my grandson is now a year and a half. I used to have my kids help in the kitchen all the time. Now my youngest (19) is thinking about chef school. Both of my daughters tell me that some of their fondest memories involve us in the kitchen.
