Easy Hamburger-Vegetable Soup

Today we're sharing a recipe for Easy Hamburger-Vegetable Soup that you can enjoy for under $5.00.


Easy Hamburger-Vegetable Soup

3 Tbsp butter ($0.38)
1/2 onion, chopped ($0.15)
6 cups water
6 Tbsp beef bouillon ($.67)
4 red skinned potatoes, cubed with skin is fine and saves time, this would be much cheaper with white potatoes ($0.75)
1 14.5 oz. can diced tomatoes with liquid ($0.50)
2-3 cups mixed vegetables ~ great way to use up odds and ends ($.60)
3/4 lb ground meat, cooked & drained ~ we use part turkey and part sausage ($1.36)

1. In large pot, saute onion in butter over medium heat.
2. Add water, bouillon, potatoes, tomatoes, & mixed vegetables to pot.
3. Bring to a boil, then cover, reduce heat, & simmer until potatoes are tender, about 15 minutes.
4. Add ground meat. Continue simmering, uncovered until meat is heated through, about 5-10 minutes.

Total cost = $4.41

tip: To stretch this soup even further, add some noodles.
