Coconut Black Beans & Rice


Tonight we had a new beans and rice meal. I really enjoyed it. So did Jonathan and Eliya. 

Tim and Emahry aren't feeling the greatest so they we're overly thrilled with it. I'm hoping next time we'll all enjoy it.

This recipe could easily serve 6 adults (we have plenty of leftovers) and cost less than $6 to make.

The inspiration comes from Stephanie O'Dea's Coconut Red Beans & Rice. This recipe is also included in her new More Make It Fast, Cook It Slow: 200 Brand-New, Budget-Friendly, Slow-Cooker Recipes.

Ingredients:
2 cans black beans, drained and rinsed*
1/2 large onion, finely diced
2 garlic cloves, minced
1 (14-oz) can coconut milk (full-fat has more flavor than low-fat varieties)
3 cups chicken broth
1 1/2 cups raw brown rice (we used brown basmati)
1/2 tsp Kosher salt
2 limes, cut into wedges, for serving (or lime juice concentrate)

Directions:
1. Place all ingredients (except limes) into your crock pot. We used a 4-quart crock pot.

2. Stir to incorporate all ingredients.

3. Cook on low 8-10 hours or until rice is tender.

4. Place in bowls with lime wedge garnish. Squeeze lime over top to add to the tropical flavor. (Or add lime juice concentrate)


* You can easily substitute 1 1/2 cups of dry black beans (soaked overnight) for the 2 cans. Sort the beans and rinse them well. Soak rinsed beans plus 1 1/2 Tbsp lemon juice (to help with digestion) overnight in a large pot covered with water by at least two inches. In the morning, drain the water and rinse the beans.

Place the beans back into the large pot, add fresh water and bring to a boil. Simmer for 20-30 minutes to help reduce the cooking time.

Add the soaked & precooked (or simply soaked) beans to the crock pot and proceed with the recipe as written above.

Precooked beans should be finished within the 8-10 hour time frame. Soaked but uncooked beans may take up to 12 hours on low or 5-7 hours on high to become tender.
