Menu Plan Monday ~ February 7th


Review of Last Week's New Recipe(s):

Chicken Broccoli Casserole:

This was really easy to make. I prepared most of it in the morning and then baked it for dinner. I put the cooked broccoli and the onion through the food processor to make them really fine.

Next time, I'll use my own homemade condensed cream of chicken soup and biscuits. I'll also skip the additional salt added to the topping. It was a little too salty for our taste.

I accidentally bought the larger size refrigerated biscuits so they weren't cooked fully when I first took the casserole out of the oven. I covered the dish with foil and baked another 15 minutes and it was perfect. The presentation is beautiful!

This Week's Menu:

We have a busy week so I'll be utilizing the Crock Pot a lot this week.

Monday: Crock Pot BBQ Pulled Pork. I can't wait to smell this cooking all day while the kids and I clean the house.

Tuesday: Crock Pot Black Beans & Rice ~ no recipe really, just 2 cans black beans (rinsed), brown rice + enough chicken stock to cook rice, 1 can diced tomatoes, minced garlic and spices. So easy, but our family really likes it.

Wednesday: Crock Pot Sloppy Joes over rice (recipe coming this week)


Friday: Leftovers

Saturday: Lasagna (using up lasagna noodles that have been in the pantry FOREVER)

Sunday: Waffles, Cheesy Scrambled Eggs & Bacon

Love that you are using the slow cooker so much. I use mine all of the time. Your menu sounds terrific. I would love for you to join me for Crock Pot Wednesdays whenever you can.
