I recently discovered this recipe on Chocolate Covered Katie. A delicious dessert recipe with only 4 ingredients (I actually bring it down to only 3 ingredients)!
Here’s how I changed the recipe a little bit. (You can see Katie’s original recipe here.
~ 1 can coconut milk
~ 3 Tbsp cocoa powder
~ 3 Tbsp powdered sucanat*
(This recipe can be a little temperamental depending on your can of coconut milk. Don’t shake the can of coconut milk!)
Usually I simply open a can of Thai Kitchen Coconut Milk (or Thai Kitchen Organic Coconut Milk seems to be even thicker) and scoop the thicker milk from the top portion of the can into a bowl.
If the milk is pretty thick already I just continue with the recipe, but if the milk is still pretty liquid I put the bowl (with the thicker milk) into the fridge overnight. I don’t add the really watery part on the bottom of the can (instead I use this along with baking soda to wash my hair—I don’t like to waste things!).
In the fridge the coconut milk will get thicker.
Once the coconut milk is thick stir or beat in the cocoa.
Then the powdered sucanat*. (You can add more or less sucanat according to how sweet you like your chocolate—I think I tend to land in the middle as far as chocolate sweetness goes.)
*Powdered sucanat is very simple to make. Just pour a cup or so of sucanat into your blender and blend until it’s powdery.

ReplyDeleteI have a Flourless Peanut Butter cookie that has 4 ingredients, and they are GOOD.
